Organic almond flour from Italy for your raw cuisine
Almond flour is gained and ground from the mass that remains after making cold pressed almond oil. It differs from regular ground almonds as it has a lower fat content of about 10-15% (oil content).
Almonds and their flour are a suitable basis for an alkaline diet.
The mineral and vitamin levels remain nearly unchanged in the process - however the amount of protein increases to 35%. In comparison to wheat flour the amount of carbohydrates in almond flour is up to ten times lower.
Furthermore, almond flour has a high Fiber content as well as vitamin E, B2 and B3. Vitamin B2 (riboflavin) supports the metabolism of iron and energy which can reduce tiredness and exhaustion. Vitamin B3 (Niacin) helps maintain normal mucous membranes and skin. Vitamin E works as a prophylactic against oxidative stress in cells.
Applications: almond flour has a strong swelling power therefore it is well suited for baking. Further it can be used as a base for crackers and tarts in the raw cuisine.
