Our coconut sugar is produced from the sap extracted from the flowers of coconut palms growing on the island of Java, Indonesia. The sap is collected using the traditional method; farmers climb to the tree-tops and extract the sap from the cut flowers.
The Glycemic Index (GI) of coconut sugar is exceptionally low at 35, making it a good alternative sweetener for diabetics. The sugar is broken down slowly, providing the body with a steady flow of energy, and avoiding the fluctuations in blood sugar levels caused by common sweeteners.
Coconut sugar is rich in potassium, magnesium, zinc, and iron. In addition, the vitamin B1, B2, B3, B6, and C content of coconut sugar is remarkable. Coconut sugar is highly soluble in water, making it suitable for a variety of culinary uses. Its natural sweetness complements any cacao product.
