Chickpeas belong to the legume family. They originated in Asia, particularly in India, where their cultivation started over 10'000 years ago. Approximately 3'000 years ago chick peas were brought across the Mediterranean, into Europe.
Chickpeas are rich in iron, calcium, magnesium, potassium, manganese, and zinc, and contain proteins, carbohydrates, and the antioxidant vitamins A, C, and E.
Sprouted chick peas can be harvested after 3-4 days. A longer germination period is not advised, as the chickpeas can develop a very bitter flavor.
Sprouted chickpeas are a great addition to salads, rice, soups, and can even be eaten as a snack.
