Cashews contain many polyunsaturated fatty acids, minerals (e.g. iron, zinc, and potassium), and B vitamins. They are also one of the best sources of the essential amino acid tryptophan.
Tip: Enjoy fresh cashew milk: mix 1-2 tbsp. cashew butter with 300ml water in a blender. Sweeten to taste with agave nectar, dates, honey, etc.
Cashew butter is delicious spread on bread or crackers with honey, added to muesli, yoghurt, salad dressings, fruit salad, ice cream, and smoothies.
