Organic Carob from Sicily
What is so special about Carob?
Carob powder is a good alternative to cocoa. It is made from the pulp of the well-known carob tree. The pods can be eaten whole and have a sweet taste. Carob powder is very low in fat, highly nutritious and rich in fiber, protein and calcium. Furthermore, Carob is caffeine and theobromine free, with a very low glycemic index of 15. Relative to cocoa, it contains three times more calcium with only 1% fat, thus 1/3 less calories.
Cultivation and history
Carob is a legume that grows in the wild, a heat-resistant evergreen tree that grows in the Mediterranean and reaches the height of up to 20 meters. The tree is undemanding and therefore ideally suited for biological cultivation in planting. The pod have been known for thousands of years and have been used as a natural sweetener.
Harvest und Processing
After harvesting, the 20cm long Carob pulps are washed, broken and the flesh removed. Than they are dried, roasted and finely ground.
