Broccoli (Brassica oleracea) belongs to the Cruciferous plant family. Broccoli calabrese originated in Italy and was brought to Europe in the 16th century via Italy.
Broccoli is a rich of minerals such as calcium, iron, zinc, phosphorus, potassium, sodium and sulfur. It also contains vitamins A, B, C, and E. Furthermore the broccoli is known for the large protein content and also for the high content of sulforaphane* with its exceptionally strong antioxidant effect. Sulforaphane* is 20 - to 50 times higher concentrated than in the mature vegetable.
Broccoli can be eaten both as seedling or sprout. After being soaked for six to eight hours, the seeds, kept at around 21 degrees Celsius, must be watered twice daily. The seedlings are ready for consumption after three to five days, although sprouts need a few more days.
Either are a wonderful garnish or addition to salads and other cold dishes. Their slight spiciness peps up any salad and is great combined with your favorite spread on bread or crackers.
