The Acai (pronounced ai-sigh-ee) is a tropical palm tree native to the Amazon rainforest in South America. It grows abundantly on the flood plains of the Amazon Basin, which has an annual rainfall of 2’500mm. The acai palm tree grows 30-40 feet tall and usually grows in clumps of about 20 up to 7’000 trees per hectare. The inhabitants cover their daily food intake with about 40% of acai fruits. An acai tree can produce up to 1’000 kg of fruit per year, although the fruit weighs only a few ounces themselves. The acai berry is spherical and between 1.5 to 2 cm big, with a large seed.

The harvesting of the acai fruit is in the dry season, between May and November. The fruit is also an important source of food for the residents of the area, who drink up to 2 liters of acai juice daily. The color of the fruit shows the development status. The color changes from white, to olive gree than to glossy black. The black color indicates that the fruit is ready for harvesting. The best quality of berries have a fine white film on the skin.The berries are harvested by hand, then transported for processing down the river and carefully cleaned in the next step.
After cleaning, the acai berry is rapidly frozen and then freeze-dried. During freeze-drying, the fruit is placed in a vacuum at temperatures of -40 degrees Celsius. By this method named "sublimation" the water is removed from the acai berry. Other processing methods, such as conservation methods, spray drying, heating above 80 degrees Celsius, or standard freezing can lead to a change in taste and color change of the Acai powder.
