Lemon Ice Cream

Ingredients

  • 200ml of water
  • 140g cashew butter
  • 90ml lemon juice freshly squeezed
  • 60-70g agave nectar
  • 35g Irish Moss Paste
  • 3 grated lemon peel 
  • 10 drops of lemon seasoning (Primavera)
  • 2-3 pinches salt
  • Pinch vanilla powder

Preparation

Mix all the ingredients in Vitamix. Fill the ice cream into the ice machine and freeze it for about 20-40 minutes depending on the manufacturer.

Without ice machine: Place the mass in the freezer and stir regularly until a smooth consistency is reached.

Lime-mint-vanilla cream

Ingredients

  • 50ml agave nectar
  • 25ml apricot kernel oil
  • 4TL freshly pressed lime juice
  • 1TL cashew butter
  • 4-6 peppermint leaves
  • 4-5 drops of lime seasoning (Primavera)
  • 1 drop of vanilla flavoring (Primavera)

Preparation

Mix all ingredients in a small personal blender. Serve the lime-mint-vanilla cream with the lemon ice cream. This cream is easy to keep in the refrigerator for 1-2 weeks.
