Soak the Irish moss for 4-6 hours, the cashews for 4 hours and the almonds for 8 hours.

Moka - Cream

Mix first 100g Dates with 80ml water. You might have to soak the dates for few minutes to few hours before, depending on how hard they are.

Then, since off the Irish Moss that you soaked and put it in your VitaMix, covered in water. Blend until perfectly smooth. Keep 2tbs of it and put the rest away for the later.

Blend with all the rest of the ingredients of the Moka Cream until smooth.

Separate this mixture in two and keep one half in a bowl at room temperature. Pour the other half at the bottom of four glasses, as a first layer, and keep refrigerated.

Mascarpone - Cream

Almond Milk: The previously soaked 40g almonds mix with 250ml water and then filter through a nut milk bag.

Rince off cashews and put it altogether with the ingredients in a VitaMix until perfectly smooth.

Pour a layer of half this cream on the first Moka layer and put back in the fridge. Keep the rest at room temperature.

Decoration

When the first two layers start to harden, place a small handful of raspberries on it and pour another layer of Mascarpone on them.

Put back in the fridge for few minutes and then add the rest of the Moka cream on top.

Embellish with rasberries, mint leaves, cacao powder, work out your mind!
